Ingredients
- 1 small head of lettuce
- 1 can of black beans, rinsed and drained
- 2 ripe Hass avocados or 1 Hall or Choquette avocado
- ½ lb. cherry tomatoes, halved
- 1 ear of grilled corn
- ¼ large red onion, minced
- 1 grilled red pepper
- Citrus Vinaigrette
- Combine all ingredients in a large bowl, serve with vinaigrette and tilapia fillets, grilled chicken or steak.
- The salad & meat can also be served with tortillas as tacos.
