Tex Mex Salad with Citrus Vinaigrette

Ingredients
  • 1 small head of lettuce
  • 1 can of black beans, rinsed and drained
  • 2 ripe Hass avocados or 1 Hall or Choquette avocado
  • ½ lb. cherry tomatoes, halved
  • 1 ear of grilled corn
  • ¼ large red onion, minced 
  • 1 grilled red pepper
  • Citrus Vinaigrette
Directions
  1. Combine all ingredients in a large bowl, serve with vinaigrette and tilapia fillets, grilled chicken or steak.
  2. The salad & meat can also be served with tortillas as tacos.
